Chef Jay is a true global citizen whose culinary philosophy was shaped by a life lived across six continents. Before planting roots in New York, Jay immersed himself in the rich culinary heritages, techniques, and flavors of India, England, Italy, Cyprus, Switzerland, and Australia.
This extraordinary journey gave him a rare, chameleon-like mastery over the global kitchen. He does not cut corners, and he does not replicate factory catering menus. From grinding and hand-toasting small-batch spices in-house to mastering traditional Italian wood-fired techniques and intricate, slow-cooked regional Indian curries, Jay approaches every custom menu as a blank canvas. His depth of knowledge allows him to honor diverse cultural traditions flawlessly, creating harmonious, sophisticated culinary dialogues on a single plate.
